Basmati Rice Vegetable Pulao


It is one of the easiest rice recipes that make for a wholesome meal. This variation of vegetable pulao has mixed vegetables and soya making it rich in protein. Basmati Rice increases Kapha and Vata and balances excessive Pitta. The use of fresh ginger and turmeric balances the high values of Kapha and Vata created through the rice. Along with varied vegetables, it balances the whole meal.



  • 1 cup of Basmati Rice
  • 1 medium sized onion
  • 1 cup chopped vegetables of your choice (Beans, carrot, cauliflower, broccoli, peas, etc)
  • 1 teaspoon clove
  • 1-inch cardamom stick
  • 1 teaspoon red chilli
  • ½ teaspoon peppercorns
  • 1 teaspoon salt
  • 2 cups of water
  • 1 teaspoon of ground cumin
  • 1/8 teaspoon of ground coriander
  • 1 bay leaf
  • 1 tablespoon Ginger garlic paste
  • Few raisins (optional)



  • Wash and drain the rice water thoroughly 
  • Heat ghee or oil in a pot or pan. Add spices and fry them until it is fragrant



  • Add chopped onions and sauté it until it is slightly golden



  • Add ginger garlic paste and sauté for 10-12 minutes



  • Add chopped vegetables and sauté it for another 5 minutes on a low flame



  • Add drained basmati rice to the pot, sauté it and stir it until the rice is covered in oil and spices



  • Add water and salt according to your taste, stir it well.



  • Lower the flame and cover the pot, let the Pulao cook for 20 minutes. Do not stir.



  • Remove it from heat after the water is absorbed and the rice are separated



  • Serve the vegetable Pulao with raita and garnish it with coriander and raisins (optional)
